Ingredients

5 ozs Goat cheese
1 tsp scallions
1 tsp finely chopped Basil
1 handful Watercress
8 ozs Fava bean (peeled)
8 ozs Peas (fresh or frozen)
1 garlic clove
6 Tbsps olive oil
1 lemon (zest and juice)
salt
freshly ground peppers
8 slices white bread

Preparation steps

1.

Stir goat cheese with chives and basil. Rinse and trim the watercress and shake dry.

Blanch the fava beans for 3 minutes in boiling salted water. Add the peas and cook 1-2 minutes. Then drain, rinse in cold water and drain.

3.

Peel the garlic and sauté until translucent in a pan in 2 tablespoons oil. Puree beans and peas together with the lemon zest and lemon juice. Add garlic and season with salt and lemon juice, then puree to combine.

4.

Heat the remaining oil in a grill pan and fry the bread slices on both sides until crispy, 2-3 minutes, then remove from pan.

5.

To serve, top each bread slice with a little watercress and about 1 tablespoon goat cheese mixture. Spread with a little bean mixture and top with a grind of fresh pepper. Arrange on a plate and serve.
