- 4 turkey breasts (about 140 grams or 5 ounces)
- salt
- freshly ground peppers
- 2 Tbsps Pastry flour
- 50 grams Corn flakes
- 1 egg
- 4 Tbsps clarified butter
- 1 Lime

Preparation steps

Rinse turkey breasts, pat dry, cut in half and season with salt and pepper. Sprinkle with flour. Place cornflakes in a freezer bag and crumble with a rolling pin. Beat egg in a shallow dish. Dredge turkey through egg, then in cornflakes. Press cornflakes into turkey and let rest for 5 minutes.

Heat butter in a large frying pan and fry turkey until golden yellow, about 4 minutes. Remove and drain on paper towels.
Plate and serve with lime wedges. Serve with fresh coleslaw, as desired.
