400 grams starchy potatoes
2 onions
2 garlic cloves
4 scallions
1 red Bell pepper
1 chili pepper
1 handful Spinach
salt
3 Tbsps vegetable oil
800 milliliters Chicken broth
1 sprig rosemary
150 milliliters Coconut milk
250 grams shrimp (peeled, ready to cook)
freshly ground peppers

Preparation steps

Peel the potatoes and dice finely. Peel the onions and garlic and chop finely. Rinse and trim the scallions and cut into thin rings. Rinse the bell pepper and chile, cut in half, remove the seeds and cut into small cubes.

Rinse the spinach, remove the stems and blanch in boiling salted water. Drain, squeeze out the excess water and chop coarsely.

Sauté the onion, garlic and chile in hot oil and pour in the broth. Add the scallion, rosemary, potatoes and peppers. Bring to a boil, then reduce the heat and simmer for about 15 minutes. Stir in the coconut milk and add the shrimp, then cook for another 8 minutes. Season with salt, pepper and lime juice and serve.
