- 2 Tbsps Fruit Vinegar
- salt
- freshly ground peppers
- ½ tsp Mustard
- 1 sugar
- 3 Tbsps olive oil
- 1 organic Orange
- 1 Lime
- cayenne pepper
- Tabasco sauce (such as tabasco)
- 1 large, red chili pepper
- ½ Cucumber
- 2 scallions
- 500 grams shrimp
- chopped Fresh herbs (for garnish)
- 1 Tbsp Lemon infused olive oil

Preparation steps
1.
For the sauce, mix the vinegar and mustard in a bowl. Gradually incorporate 4 tablespoons of oil with a whisk. Season to taste with salt and pepper.

Grate the zest of half an orange and stir into the sauce. Halve the orange and the lime, and squeeze the juice. Mix the juice into the dressing, then season to taste with cayenne pepper and tabasco.

Rinse and halve the chili. Remove the seeds and finely dice. Rinse, trim, and thinly slice the scallions. Rinse the cucumber, pat dry, and finely dice.
4.
Heat the lemon olive oil in a pan. Add the shrimp, sauté briefly, then season to taste with salt and pepper. Mix the shrimp, scallions, chili, and cucumber into the dressing. Let infuse for 30 minutes, garnish with the herbs, and serve.
