- 1 onion (peeled and finely chopped)
- 1 clove garlic cloves (peeled and finely chopped)
- 1 chili pepper (rinsed and finely chopped)
- 4 Tbsps Nut oil
- 2 Tbsps Peanut butter
- 1 ⅔ cups Chicken broth
- 1 Tbsp ground paprika
- 2 Tbsps Crème fraiche
- 24 shrimp (prepared, peeled apart from tail, deveined, rinsed and dried)
- lemon juice
- 1 tsp fresh thyme

Preparation steps
1.
Sweat the onions in 2 tbsp of oil, add the chilli and garlic and fry.
2.
Stir in the peanut butter and allow to caramelise slightly.
3.
Pour in the broth, add the paprika and simmer for around 10 minutes until slightly thickened and reduced.
4.
Stir in the creme fraiche and season to taste with salt, pepper and lemon juice.
5.
Drizzle the shrimps with the remaining oil, season with salt and pepper and scatter with thyme.
6.
Grill the shrimps on a hot griddle or barbecue for 3-4 minutes.
7.
Place in a bowl and pour over the sauce.
8.
Crusty white bread makes an excellent accompaniment.
