¾ cup Shredded coconut
1.333 cups double cream
1 ¼ cups plain Yogurt

Preparation steps

1.
Preheat the grill to its highest setting.
2.
Spread the coconut out on a baking sheet and toast under the hot grill until golden brown. Leave to cool.
3.
Whip the cream until thick but not stiff, then fold in the yoghurt and half of the toasted coconut.
4.
Spoon the cream into four fool glasses and sprinkle over the remaining coconut.
