Nutritional values

Veal is a great source of minerals such as zinc and iron. Incidentally, the stronger the color, the more of the easily utilizable trace element it contains. In the body, iron is needed for transport and for supplying the cells with oxygen.

Those who do not have to follow a lactose-free diet can replace the soy cream with cream as desired and use regular cow's milk instead of lactose-free milk.

Preparation steps

1.

Peel the potatoes, wash them, cut them into coarse pieces and cook them in boiling salted water for 20-25 minutes until soft.

2.

Meanwhile, pat meat dry and cut into narrow strips. Peel the onion and chop finely. Clean mushrooms, rub and cut into thin slices. Heat oil in a large frying pan. Fry meat in portions over high heat for 2-3 minutes, season with salt and pepper, remove and set aside.

3.

Heat 1 tablespoon margarine in frying pan. Fry onions and mushrooms in it over medium heat for 3-4 minutes, turning, deglaze with veal stock and reduce liquid by 1⁄3 cup. Mix soy cream and starch, stir in and bring sauce to a boil over high heat. Add meat strips again and simmer everything covered for another 5 minutes over medium heat.

4.

Drain potatoes, drain and return to pot. Heat milk, season with salt and 1 pinch of freshly grated nutmeg and add with remaining margarine. Mash everything with a potato masher and season to taste. Wash chives, shake dry and cut into fine rolls. Put the mashed potatoes on warmed plates, arrange the meat with the sauce on top, grind with pepper, sprinkle with chives and serve.
