300 grams Couscous
1 tsp Turmeric
1 pinch ground cilantro
1 pinch ground Cumin

1 Orange (juiced)
3 scallions
100 grams Snow peas
1 lemon (juiced)
4 Tbsps olive oil
1 new Lettuce
mint (for garnishing)

Preparation steps

Mix couscous with turmeric, coriander powder, cumin powder, about 1 teaspoon of salt and raisins in a bowl. Combine orange juice with water to to make 300 ml (approximately 1 1/4 cup) and bring to a boil, pour over couscous and let soak for about 10 minutes.

Rinse and dry scallions, cut into rings. Rinse snow peas and blanch in boiling salted water for 2-4 minutes or until al dente. Drain and rinse in cold water, drain again. Whisk lemon juice with oil and season with salt. Toss snow peas and scallions with the dressing and add to couscous, let stand for at least 30 minutes.

Rinse lettuce and place 8-10 small tender leaves on plates. Top with coucous and snow peas, garnish with mint and serve.
