- 75 milliliters Apple juice
- 50 grams slivered almonds
- 2 Tbsps Caper
- 1 Red onion
- 1 kilogram Fennel
- 1 handful parsley
- 1 lemon (juiced)
- 4 Tbsps olive oil
- salt
- freshly ground peppers

Preparation steps

Soak raisins in apple juice. Toast almonds in a dry frying pan until fragrant and golden brown. Remove from heat and let cool. Drain capers and chop. Peel onion and cut into fine strips. Rinse and quarter fennels, cut out stalks and cut into fine strips. Rinse parsley, shake dry and pluck off leaves.

Whisk lemon juice with olive oil and season with salt and pepper. Combine fennels with raisins with juice, almonds, capers, onion and parsley, toss with the dressing and season to taste. Arrange on plates and serve.
