400 grams instant Couscous

6 Tomatoes
3 scallions
2 garlic cloves
1 bunch Arugula (about 80 grams)
½ Oak leaf lettuce
2 cooked Chicken breasts (about 150grams)
2 Tbsps raisins
1 tsp ground cilantro
Iodized salt
freshly ground peppers
4 Tbsps olive oil
3 Tbsps White vinegar
½ bunch finely chopped parsley

Preparation steps

Pour 400 ml (approximately 1 1/2 cups) boiling water over the couscous, cover, and let soften for 5 minutes. Fluff the couscous with a fork. Rinse tomatoes, halve, remove seeds and chop. Rinse and chop the scallions. Peel garlic and chop finely. Rinse arugula and lettuce, spin dry, and tear into smaller pieces as desired.

Rinse the chicken breasts, pat dry, and chop. Mix tomato, scallion, and garlic with raisins and sprinkle with coriander, salt, and pepper. Add oil, vinegar and 1/2 cup of hot water to the couscous. Add the chicken, tomato mixture and parsley. Place salad leaves around a serving platter and top with the couscous salad.
