3 medium-sized Zucchini
2 Tbsps Oil
salt
peppers
1 ⅔ cups Feta (sheep's milk)
10 rosemary
extra virgin olive oil

Preparation steps

1.
Cut the courgettes into 20 wafer-thin lengthwise slices (use a mandoline if available).
2.
Heat the oil in a frying pan and fry the courgette slices on both sides, a few at a time, until lightly browned. Season with salt and pepper. Drain on kitchen paper and leave to cool.
3.
Cut the feta into 20 small, even pieces and wrap each in a slice of courgette. Secure with rosemary.
4.
Place the courgette rolls on serving plates in a pool of olive oil.
