Preparation steps

1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease 4 ramekins (7 cm in diameter) with butter.

Beat the egg whites and a pinch of salt until stiff. Mix together the quark, egg yolks, sugar, cornflour, vanilla sugar and the flour. Fold in the egg whites.

Transfer the mixture into the prepared ramekins and bake for 20-25 min. Remove from the oven, leave to cool and then carefully knock out of the ramekins.
4.
Puree half the berries with the icing sugar and the lemon juice. Sieve and mix with the mascarpone. Fold in the whipped cream.
5.
Spread the mixture on top of the cakes and garnish with the remaining berries. Serve dusted with icing sugar.
