Preparation
Kitchen utensils
1 Cutting board, 1 Small knife, 1 Large knife, 1 Fine grater, 1 Citrus juicer, 1 Tablespoon, 1 kleine Bowl, 1 Fork, 1 Kitchen shears, 1 Aluminum foil, 1 Baking sheet, 1 Teaspoon, 1 Brush, 1 Measuring cups
Preparation steps
1.
Bring the milk slowly to a boil in a heavy-based pan, stirring.
2.
Reduce the heat right down and add the lemon juice and salt. Stir gently until the white curd starts to form. Continue to stir gently, being careful not to break up the lumps. Remove from the heat.
3.
Stir in the coriander and chilli flakes.
4.
Pour the mixture through a colander lined with 4 layers of muslin. Tie up the muslin, then squeeze out as much liquid as you can. Hang the muslin bag over a bowl and let it continue to drip for about 1-1½ hours.
5.
Place a heavy weight, such as a pan filled with water, on top of the wrapped cheese for 30 minutes.
