Cold Tomato Soup with Black Forest Ham
Rinse, core and roughly chop the tomatoes.
Peel oranges with a sharp knife and coarsely chop.
Rinse the basil, shake dry and pluck the leaves from the stems. Set some leaves aside for garnish.
Peel and chop garlic.
Combine the tomatoes, oranges, basil, garlic, balsamic vinegar and lemon juice in a blender and puree. Strain the mixture through a sieve and return to the blender. Continue to blend while drizzling in the olive oil. Season the soup with sugar, salt and cayenne pepper. Divide the soup between soup glasses. Slice the ham into thin strips and place them on top of the soup. Season with pepper and garnish with basil leaves.
Serve with white bread if desired.
