Preparation steps

Peel and thinly slice the shallots and garlic. Add to a pot with the bay leaves, cloves, coriander, fennel, vinegar, salt, sugar, and 200 ml (approximately 7 ounces) of water. Bring to a boil, and cook for 2-3 minutes. Pass the cooking liquid through a fine strainer into a bowl, then add the mustard seeds. Cover and let soak for 3 days. Coarsely puree with an immersion blender, then transfer into jars. Seal tightly and let age for 1 week.
