- 11 ozs Cherries (pitted)
- 2 Tbsps sugar
- ⅛ cup Cassis liqueur
- 1 egg white
- 1 tsp lemon juice
- ½ cup powdered sugar
- ⅔ cup cream (48% fat)
- 9 ozs plain Yogurt
- 1 cup cream cheese
- 2 Tbsps chopped Dark chocolate (70% cocoa solids)
Preparation steps
1.
Put the cherries, sugar and cassis in a pan and slowly bring to a boil. Reduce the heat and simmer gently for 6-8 minutes until the cherries have softened. Push through a sieve into a bowl and allow to cool.

Whisk the egg whites with the lemon juice until stiff. Gradually whisk in the icing sugar until stiff.

Whisk the cream until thick and stir in the yoghurt and cream cheese until smooth.

Fold the egg whites into the cream mixture and put into a freezerproof container. Drizzle over the cherry sauce and sprinkle with the chocolate. Mix lightly to create a marbled effect. Cover and freeze for 4 hours.
5.
Remove from the refrigerator about 10 minutes before serving
