- 2 ⅓ cups ripe, dark Cherries (pitted)
- ¼ cup water
- xylitol (to taste)
- 1 ⅓ cups plain Yogurt
- ⅔ cup Crème fraiche
- 2 egg whites
- 1 Tbsp xylitol (to taste)
- To serve
- Mandarin orange
- Cherries
- chopped Pistachio

Preparation steps
1.
Put the cherries and water in a pan and bring to a simmer. Cool gently for 4-5 minutes until soft. Blend or mash to a puree and sweeten to taste. Set aside to cool.
2.
Whisk the creme fraiche, then whisk in the yoghurt. Gently fold into the cherry puree.
3.
Pour into a freezer-proof container and freeze until slushy.

Put into a bowl and beat well.
5.
Whisk the egg whites until frothy, then gradually whisk in the xylitol until stiff.
6.
Carefully fold the egg whites into the cherry mixture until blended.
7.
Spoon into freezer-proof containers, cover and freeze until solid. Put into the refrigerator about 20 minutes before serving.
8.
Serve with mandarin orange segments and cherries and sprinkle with pistachios.
