250 milliliters Beef broth

2 Tbsps butter
350 grams Hard cheese (such as mild mountain cheese or Emmentaler)

Preparation steps

Peel the potatoes, rinse and dice. Bring the broth to a boil in a pot, add the potato cubes, season with salt and pepper, cover and cook until tender, about 20 minutes.

Peel the onion and garlic, dice the onion and finely chop the garlic. Melt the butter in a large frying pan and sweat the onion and garlic until translucent, 2-3 minutes.

Cut the cheese into small cubes. Drain the potatoes and add to the pan. Mash with a fork until slightly lumpy, mix in the cheese, season with salt, pepper and caraway and flatten in the pan. Reduce the heat to low and cook, undisturbed, for about 10 minutes, until golden brown. Invert the potato pancake onto a large plate or lid then slide back into the pan. Cook for another 10 minutes, until golden brown. Soak up any excess fat with paper towels.

Serve cut into pieces.
