1 Tbsp dried Basil
1 Tbsp ground allspice
1 tsp ground Nutmeg
1 tsp ground cinnamon
1 Tbsp light brown sugar
2 Tbsps fresh thyme (minced)
1 tsp cayenne pepper
1 tsp ground cilantro
½ tsp salt
freshly ground Black pepper (to taste)
¼ cup good quality olive oil
¼ cup low-sodium soy sauce
¾ cup apple cider vinegar
½ cup Orange juice
2 Tbsps fresh Lime juice
1 Jalapeño (peppers)
1 medium onion (minced)
2 cloves garlic cloves (peeled and minced)
6 cups large shrimp (peeled and deveined)
1 fresh Lime (or lemon)
wooden or metal Skewer

Preparation steps

Set up grill or broiler and preheat to medium-high heat.

Meanwhile, in a medium saucepan, combine the first 10 ingredients. Gradually whisk in the oil, soy sauce, vinegar, orange juice and lime juice. Fold in peppers, onions, and garlic, mixing until fully incorporated. Set over medium heat and simmer for about 10 minutes.

Thread the shrimp onto skewers, and season with salt and pepper. Grill until opaque and cooked through, about 2 minutes each side. Drizzle the sauce over both sides of the shrimp, reserving left over sauce for dipping. Serve immediately.
