16 Prawn (shelled with tails intact)
¼ cup olive oil
½ tsp cayenne pepper
½ tsp paprika
lemons (juiced from one lemon)
Basil (picked)
mint (picked)

16 wooden Skewer (soaked in cold water for 30 minutes beforehand)

Preparation steps

1.
Pre-heat the grill to hot.
2.
Position two prawns so that their heads are facing each other and the prawns appear to make a heart-shape. Secure the prawns in this position using two wooden skewers.
3.
Brush with the olive oil and arrange on a baking tray.

Season them just before you grill them, working in batches if necessary, cooking them for 2-3 minutes turning a few times until they are pink and tender.
5.
Remove them and drizzle the kebabs immediately with the lemon juice. Sprinkle with a mixture of the cayenne pepper and the paprika.
6.
Divide the mint and basil leaves between 4 serving bowls then arrange two prawn kebabs across the rims of the bowls. Serve immediately.
