Preparation steps

Preheat oven to 175 ° C (approximately 350 ° F). Fill a deep baking tray 3/4 full with boiling water and slide into oven. Caramelize half of the sugar in a saucepan until light brown. Pour 1 tablespoon into ramekins measuring 8 cm (approximately 3 inches) in diameter.

Scrape vanilla bean. Whisk vanilla, eggs, egg yolks, remaining sugar, heavy cream and warm milk and add mixture to the caramel layer in the ramekins. Place the filled ramekins in the baking tray and poach for about 30 minutes. Pudding is done when inserted toothpick comes out clean.

Remove ramekins, cool and refrigerate for at least 3 hours. Dip bottom of ramekins in hot water, run a sharp knife around edges and flip onto a dessert plate to serve.
