- For the pudding
- 7 ozs dried Date (pitted and chopped)
- 1 cup water
- ½ tsp baking soda
- 0.333 cup butter
- ¾ cup superfine caster sugar
- 2 eggs (beaten)
- 1 ½ cups self-rising flour (sifted)
- 1 tsp Mixed spice
- ½ cup chopped Walnut
- For the sauce
- 1 ½ cups light brown sugar
- ½ cup unsalted butter (scant)
- 1 cup cream (48% fat)
- To serve
- Vanilla ice cream
Preparation steps

For the pudding: heat the oven to 180°C (160° fan)350°F gas 4. Butter a baking dish.

Put the dates and water in a pan and bring to a boil. Cook for 3-4 minutes until softened, then remove from the heat and stir in the bicarbonate of soda. Set aside to cool.

Beat the butter and sugar in a mixing bowl until soft and creamy, then beat in the eggs, flour and spice until well mixed. Stir in the walnuts.

Stir in the date mixture and pour into the dish. Bake for 30-35 minutes until just firm to the touch.

For the sauce: put all the ingredients in a pan over a low heat and stir until the sugar has dissolved. Simmer for 5 minutes, stirring, until golden brown.

Cut the pudding into squares and serve warm with the sauce and vanilla ice cream.
