Preparation steps

1.

Bring the sugar and 80 ml (approximately 3 ounces) of water to a boil in a thick-bottomed steel pot. Cook the mixture until a candy thermometer registers 160°C (approximately 320°F). Remove the pan from the heat immediately.

Pour the caramel onto a baking sheet lined with parhcment paper. Spread thinly, and use to decorate desserts, sweets, and lollipops.
