500 grams Buttermilk
2 tsps Lemon peel
1 pinch salt
2 eggs
1 Tbsp vegetable oil (for the waffle iron)

Preparation steps

1.

Combine the oatmeal and buttermilk and let stand for about 2 hours. Stir in the lemon zest, salt and eggs and mix well.

Preheat the waffle iron and grease with vegetable oil. Spoon about 1 1/2 tablespoons of the waffle batter in and cook for 3-4 minutes, until golden brown. Keep the waffles warm in a 70°C (approximately 150°F) oven and continue with the remaining batter. Serve hot with honey and fresh fruit.
