1 Combine rice, salt to taste and 2 1/4 cups of water in a pot. Bring to a boil over medium heat.
2 Stir once, then cook uncovered over low heat until almost all the liquid has been absorbed., about 15 minutes.
3 Cover the pot with a clean kitchen towel and lid. Reduce the heat to lowest setting and cook until rice is tender and all liquid is absorbed, 10-12 minutes.
4 Remove the pot from the heat and let stand, covered, for about 7 minutes. Fluff grains with a fork and serve.
