- 1 Lime (juiced)
- 1 clove garlic cloves (finely chopped)
- 2 cans red Kidney beans (drained and rinsed)
- 2 Avocados (peeled, stone removed and flesh chopped)
- 2 shallots (very finely chopped)
- Cress (to garnish)

Preparation steps
1.
Mix together the oil, lime juice and garlic. Season with salt and pepper to make a dressing.
2.
Mix together the kidney beans, avocados and shallots, spoon into bowls and drizzle over the dressing.
3.
Garnish with the salad cress.
