- 1 Red onion (finely chopped)
- 4 ripe Tomatoes (chopped)
- 8 Lettuce (torn)
- 4 Avocados
- 2 Tbsps extra virgin olive oil
- 2 Tbsps lemon juice
- salt
- peppers
- To garnish
- 3 ½ ozs Bean sprout
- pea shoots

Preparation steps
1.
Put the onion, tomatoes and lettuce into a large bowl.
2.
Peel the avocados and roughly chop the flesh. Add the flesh to the bowl.
3.
Add the oil and lemon juice and toss well to coat. Season to taste with salt and pepper.
4.
Divide between 4 bowls and garnish with bean sprouts and pea shoots.
