- 3 Tbsps Oil
- 1 onion (sliced)
- 1 clove garlic cloves (crushed)
- 1 Tbsp Curry powder
- 2 carrots (cut into batons)
- 8 english Green beans (topped, tailed and chopped)
- 1 ⅓ cups Tofu (cubed)
- 1 cup chicken stock (or water)
- 2 tins green Lentils (drained and rinsed)
- parsley (to garnish)

1 Cutting board, 1 Small knife, 1 deep bowl, 1 Measuring cups, 1 Teaspoon, 1 Immersion blender
Preparation steps
1.
Heat the oil in a pan and cook the onion until translucent.
2.
Add the garlic and curry powder and cook for 2 minutes, stirring all the time.
3.
Add the carrots, tofu and the stock, bring to a boil and cook for 3 minutes. Add the bobby beans and cook until tender, adding a little more water if necessary.
4.
Stir through the lentils and serve with parsley to garnish.
