Ingredients

For the marinade
4 cups lamb (from the shoulder, diced)
1 ⅔ cups olive oil
3 garlic cloves
5 thyme
2 bay leaves
1 tsp pink peppercorns
For the ragout
1 round Loaf of bread
2 ½ cups Tomatoes (diced)
4 young garlic cloves (halved)
0.333 cup black Olives
peppercorns (to garnish)
thyme (to garnish)

Preparation steps

1.
Place the meat in the olive oil with the garlic cloves and the thyme. Add the bay leaves and pink peppercorns and cover. Leave in the fridge to marinate overnight.

Heat the oven to 190°C (170° in a fan oven), 375°F, gas 5.

Sliced the top off the loaf of bread and hollow out the middle. Spread the marinade inside the bread.

Drain the meat and mix it with the tomatoes, garlic bulbs and olives and stuff the mixture inside the bread. Add the peppercorns, place the lid on top and bake for approx. 50 minutes.
5.
Remove the lid and cook for a further 15-20 to brown the meat. Serve with fresh thyme.
