Apple-potato Pancake Casserole
Cook potato pancakes in oil according to package directions and drain on paper towels. Rinse apples, quarter, seeds and cut into pieces. Sprinkle with the juice of an orange.
Cut potato pancakes into pieces and place in a greased shallow baking dish or 4 souffle dishes. Toss apples, almonds and raisins and place in the baking dish.
Whisk eggs, cream, remaining orange juice, cinnamon and sugar and pour over the top. Bake in preheated 200°C (approximately 400°F) oven for 30 minutes.
