2 Tbsps sugar
600 grams predominantly waxy potatoes
2 egg yolks
1 Tbsp Potato starch (depending on potato variety)
salt
Nutmeg
vegetable oil (for frying)

Preparation steps

1.

Rinse apples, cut into quarters, remove seeds and dice. Boil apples in a saucepan with lemon juice, sugar and a little water. Cover and simmer for about 10 minutes until apples begin to disintegrate. Remove the lid, remove from heat and let cool.

Peel potatoes and grate. Wrap in a damp tea towel and press gently. Then drain into a bowl. Mix grated potatoes in a bowl with egg yolks and potato starch and season with salt and nutmeg.

Heat oil in a pan (preferably non-stick), pour potato mixture into the pan, flatten and fry for 2-3 minutes until golden brown. Turn potatoes over and fry an additional 2-3 minutes until golden brown. Remove from the pan and drain on absorbent paper.

4.

Serve potatoes on a plate with apple compote.
