Nutritional values

Amaranth is especially beneficial for vegetarians or vegans as its rich in iron. A 100 gram serving contains 9 milligrams of this trace mineral, which helps support healthy blood. The fruity cream cheese and sour cream mix contains a lot of vitamin B2 and calcium, which are good for the bones.

Sour red currants are not for everyone. If you want a less tart flavor, you can substitute for strawberries, blueberries, mangoes, or peaches.

Kitchen utensils

1 wide Pot, 1 Measuring cups, 1 Wooden spoon, 1 Cutting board, 1 Parchment paper, 1 Rolling pin, 1 Paper towel, 1 Large knife, 1 Baking sheet, 1 Oven rack, 1 Small knife, 1 Tablespoon, 1 Fork, 1 Mixing bowl, 1 Hand mixer, 1 Kitchen scale, 1 Small bowl

Preparation steps

Amaranth Squares preparation step 1

Place the sugar in a wide pot and heat until melted and golden brown (caramel).

Amaranth Squares preparation step 2

Add orange juice and butter and cook while stirring for 2 minutes until completely smooth. Remove the pot from the heat.

Amaranth Squares preparation step 3

Line work surface with a sheet of parchment paper. Blend 5-grain flakes and popped amaranth into the caramel. Pour the mixture immediately onto the parchment and cover with a second sheet of parchment.

Amaranth Squares preparation step 4

Roll out into a rectangle about 12 x 6 inches. Press edges to make neat. Remove top parchment. Allow amaranth mixture to cool completely.

Amaranth Squares preparation step 5

Using a paper towel, lightly oil the blade of a large knife. Cut the firm amaranth mixture into 8 squares, about 3 x 3 inches, separating the squares from each other.

Amaranth Squares preparation step 6

Transfer parchment paper with squares to a baking sheet and bake on the middle rack of a preheated oven at 400°F for about 8 minutes.

Amaranth Squares preparation step 7

Transfer the parchment paper with the squares onto a wire rack and allow to cool completely.

Amaranth Squares preparation step 8

Meanwhile, rinse the currants, drain and set aside 8 short stems. Strip the berries from the remaining stems with a fork.

Amaranth Squares preparation step 9

Beat together cream cheese, sour cream, and honey in a mixing bowl until smooth with a hand mixer. Stir in currants and add sweetener to taste.

Amaranth Squares preparation step 10

Top amaranth squares with cheese mixture and garnish with the reserved currants.
