1 pinch salt
1 tsp lemon juice
170 grams powdered sugar
250 grams ground almonds
60 small Wafer
30 blanched almonds (halved)

Preparation steps

Preheat the oven to 140°C (approximately 285°F).

Whip the egg whites with the salt and lemon juice until soft peaks form. Slowly add powdered sugar and continue whipping until stiff and glossy. Fold the ground almonds into the egg whites. Place the baking wafers on a baking sheet lined with parchment paper. Scoop the batter onto the wafers using a teaspoon. Top each with a halved almond and bake for 20-25 minutes. Remove from the oven and cool on a wire rack.
