- 250 grams Zucchini
- 1 garlic clove
- 1 shallot
- 200 grams Feta
- 200 grams Pastry flour
- 2 tsps Baking powder
- 1 tsp baking soda
- 1 tsp salt
- ½ tsp ground peppers
- 2 eggs
- 30 milliliters olive oil
- 350 grams Yogurt (0.1% fat)
- 50 grams Pine nuts
Preparation steps

Preheat the oven to 200°C (approximately 400°F). Line muffin tins with paper lining. Rinse the zucchini and coarsely grate. Peel the garlic and the shallot and finely chop. Drain the feta and chop. Mix the flour with the baking powder, baking soda and season with salt and pepper. In another bowl, beat the eggs with the oil and the yogurt. Mix the flour mixture with the zucchini, garlic, shallot and 2/3 of the feta, until all ingredients are slightly damp. Pour batter into the muffin tins, distribute the remaining feta on top and lightly press. Sprinkle the pine nuts on top and bake in the oven for about 30 minutes.
