Lemon peel
4 Tbsps Wild garlic oil

1 generous pinch sugar
1 scallion
Lemon balm (for garnish)

Preparation steps

1.

Mix the lime juice, wild garlic oil, and sugar to form a marinade. Season to taste with salt and pepper. Rinse, trim, and thinly slice the scallion. Rinse the zucchini and pat dry. Thinly slice lengthwise. 

2.

Divide the zucchini onto plates, and sprinkle with scallions, lemon zest, and herbs. Crumble the feta over the top. Drizzle with the dressing, and garnish with the lemon balm.
