600 grams waxy potatoes
2 Zucchini
1 shallot
1 garlic clove
2 Tbsps olive oil
400 grams Tomatoes (canned)
75 milliliters dry white wine
salt
freshly ground peppers
1 Tbsp freshly chopped Sage
150 grams Feta
Sage (for garnish)

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Scrub the potatoes thoroughly and cut into wedges. Rinse, trim and slice the zucchini.

Peel the shallot and garlic, chop finely and sweat in hot oil until translucent. Add the tomatoes and wine and season with salt and pepper. Simmer for 4 minutes. Stir in the chopped sage. Set aside 3 tablespoons tomato sauce. Arrange the potatoes in a baking dish, spoon the tomato sauce over top then cover with the zucchini, slightly overlapping. Sprinkle with the remaining tomato sauce and feta and bake for 40-45 minutes. Serve garnished with fresh sage.
