150 grams Wild rice
salt
150 grams Feta
60 grams Cashews (chopped)
2 Tbsps olive oil
1 splash lemon juice
freshly ground peppers
2 Zucchini

Preparation steps

Bring a pot of 400 ml (approximately 13 1/2 ounces) of salted water to a boil. Rinse the rice in a colander, place in the water and cook, covered for 5 minutes. Continue to cook over low heat until the rice has swelled and absorbed the water, about 40 minutes. If necessary add more water.  Place the rice in a bowl and let cool. Stir in the feta cubes and cashews. Using a fork, stir the oil into the rice and season with lemon juice, salt and pepper.

Rinse the zucchini, and cut lengthwise into very thin slices. Place  2 of the nicest slices next to each other overlapping slightly and form a ring, secure with toothpicks. Place on a plate, spoon the rice mixture into the center and serve.
