3 ozs Wild garlic
4 ozs olive oil
2 Tbsps freshly grated Parmesan
3 ozs Crème fraiche
salt
1 tsp lemon juice

Preparation steps

1.

Toast the almonds until golden brown in a frying pan. Remove from pan and let cool.

2.

Rinse the wild garlic, shake dry and chop coarsely. Puree together with the almonds and some oil. Gradually incorporate the rest of the olive oil until the pesto has a creamy consistency. Stir in the parmesan and the crème fraîche and season with salt, lemon juice and pepper.
