Wild garlic is not only extremely aromatic, the green spring herb also contains a great deal of vitamin C (150 milligrams per 100 grams). The ascorbic acid catches free radicals that are caused by stress, illness, poor nutrition or smoking. This protects cells and tissue and strengthens the immune system.

The ingredients can be varied as desired: Instead of pine nuts, almonds, hazelnuts or pumpkin seeds are also suitable. You can replace the pecorino with parmesan as you like, but do not leave out the nuts completely, as they give the pesto stability and flavour.

1 pc Parmesan (about .75 ounce)

Preparation steps

1.

Toast the pine nuts in a dry frying pan until golden brown.

2.

Rinse the wild garlic, shake dry and chop coarsely. Toss with grated parmesean.

3.

Puree the wild garlic with the pine nuts. Add the olive oil gradually drop by drop until the pesto is creamy.

4.

Stir in the remaining parmesan and season with salt and pepper.
