¾ cup caster sugar
1 cup roasted Hazelnuts
cup cream (38% fat)
½ cup unsalted butter (chopped)
14 ozs white chocolate (chopped)
3 cups Shredded coconut

Preparation steps

1.
Line a large baking tray with non-stick baking paper.

Heat the sugar and water in a pan and stir over a low heat until the sugar dissolves. Bring to a boil and boil for 8-10 minutes, until golden brown;149ºC|300ºF on a sugar thermometer.

Stir in the nuts then quickly pour the brittle onto the baking tray. Leave to set.
4.
Heat the cream and butter in a pan and bring to a boil. Remove from the heat and add the chocolate, stand for 2 minutes, then stir until smooth. Chill for 20 minutes, until set.
5.
In a food processor, blend the hazelnut caramel until coarsely chopped.
6.
Put into a bowl and stir in the chocolate mixture. Chill for 30 minutes. Roll tablespoonfuls of mixture into balls then roll in the coconut. Chill for 1 hour until firm.
