4 small Sweet potato (sliced, slices halved)
11 ozs mixed Lettuce (e. g. oak leaf lettuce, green lettuce, rocket, torn into bite-sized pieces)
2 cups cherry Tomatoes (halved)
1 small Cucumber (thinly sliced)
1 cup unsalted Macadamia Nuts (roughly chopped)
For the vinaigrette
3 Tbsps balsamic vinegar
1 tsp salt
½ tsp Mustard
6 Tbsps olive oil

Preparation steps

Heat the oil and fry the sweet potatoes for about 8 minutes, until golden brown.

For the vinaigrette: mix together all the ingredients.

Mix together the lettuce leaves, tomatoes, cucumber and hot sweet potato slices and drizzle with vinaigrette. Sprinkle with the chopped macadamia nuts.
