- 1 large Zucchini (roughly chopped)
- 11 ozs Smoked mackerel
- 4 cups mixed-leaf salad
- 2 Tbsps olive oil
- 1 lemon (cut into wedges)
- salt
- freshly ground Black pepper

Preparation steps
1.
Cook the potatoes in a large saucepan of salted, boiling water for 15 - 18 minutes until tender to the point of a fork.
2.
Add the courgette to the water about 3 minutes before the potatoes are ready. Drain the vegetables and refresh in iced water. Remove any skin and bones from the mackerel and flake with a fork.
3.
Drain and dry the vegetables before tossing with the mackerel. salad leaves, olive oil, a squeeze of lemon juice, and some seasoning.
4.
Toss well and pile onto plates before serving with any extra lemon wedges on the side.
