- 6 ½ cups roasting potatoes (peeled and cut into 2 inch chunks)
- salt
- Black pepper
- 2 cloves garlic cloves (minced)
- ⅜ cup olive oil
- Garlic Scapes (to garnish)

Preparation steps
1.
Boil the potatoes in salted water until tender; usually 20-25 minutes.
2.
Meanwhile, combine the garlic and the olive oil in a small mixing bowl. Drain the potatoes when tender and allow to steam for 1 minute.
3.
Transfer to a large mixing bowl and toss with the garlic oil
4.
Spoon into mini serving dishes using a slotted spoon and season with salt and black pepper. Garnish with the garlic flowers and serve.
