- 3 cups small new Potato
- salt
- 1 ⅓ cups Broad bean
- 1 ¾ cups Green beans
- ⅔ cup peas
- 1 lemon (juice)
- 5 Tbsps olive oil
- freshly ground Black pepper
- ⅔ cup Feta (crumbled)
- 1 Tbsp chopped mint

Preparation steps
1.
Bring a large pan of salted water to a boil and cook the potatoes until tender. Drain well and set aside.
2.
Cook the broad beans and green beans in a pan of boiling salted water for 3 minutes, then add the peas and cook for 2-3 minutes until the vegetables are crisp-tender. Drain well and set aside.
3.
Whisk together the lemon juice and olive oil and season to taste with salt and black pepper.
4.
Gently stir the warm vegetables and cheese into the dressing until coated.
5.
Divide between 4 serving bowls and scatter over the mint.
