- 1 Tbsp sunflower oil
- 1 Tbsp butter
- 2 small scallions (chopped)
- ⅔ cup Pancetta (diced)
- 4 cups frozen peas
- ⅔ cup vegetable stock
- 1 Tbsp lemon juice
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the oil and butter together in a large saute pan set over a moderate heat until hot.
2.
Add the spring onion, pancetta (or bacon), and a pinch of salt, frying for 4 - 5 minutes.
3.
Add the peas, stirring well, and then add the stock. Cover the pan with a lid and cook over a reduced heat for 4 - 5 minutes until the peas are tender and warmed through.
4.
Remove the lid and season to taste with lemon juice, salt, and pepper.
5.
Spoon into a bowl and serve immediately.
