600 grams Ground turkey
2 egg yolks
80 grams breadcrumbs

1 red Pepperoncini
5 scallions
500 grams Cherry tomatoes (red and yellow)
40 grams butter
3 Tbsps olive oil

Preparation steps

1.

In a bowl, mix the ground turkey with the two egg yolks and 4 tablespoons breadcrumbs. Season with salt and pepper. With moistened hands, form into small balls and refrigerate until ready to cook.

Rinse the pepperoncini, halve lengthwise, remove the seeds and white ribs and cut into thin rings. Rinse the scallions and slice diagonally. Rinse and halve the cherry tomatoes.

Roll the meatballs in the remaining breadcrumbs. Heat the butter in a pan and saute the meatballs over medium heat until golden brown on all sides, 8-10 minutes. Remove from the pan and drain on paper towels.

4.

Heat the olive oil in a skillet and saute the scallions, pepperoncini and cherry tomatoes, stirring occasionally for 5-7 minutes. Season with salt and pepper. Add the meatballs and cook until heated through. Season to taste and serve.

5.

If desired, serve with flatbread.
