1 onion
2 stalks parsley
22 ozs turkey breasts
2 Tbsps Canola oil
3 ozs ham

Preparation steps

1.

Peel and dice the potatoes, then cook for 20 minutes in boiling salted water.

Rinse the tomatoes, pat dry, and cut in half. Peel the onion and julienne. Rinse and dry the parsley, then remove the leaves and chop.

Rinse the turkey under cold water and pay dry. Cut into bite-sized pieces. Heat the oil in a pan. Sauté the turkey until golden brown on all sides. Remove the turkey from the pan and set aside.

4.

Add the potatoes and the ham to the pan, and cook until golden brown. Add the onion, and sauté briefly. Add the turkey and the tomato, season with salt and pepper, and sauté for 2-3 minutes.

5.

Mix in the parsley, and serve immediately.
