4 Turkey cutlets (150 grams each)
8 sprigs rosemary

4 slices Sliced cheese (such as Manchego)
1 Tbsp olive oil
500 grams Cherry tomatoes
2 onions

Preparation steps

Preheat the oven to 200°C (approximately 400ºF).

Rinse the turkey cutlets and pat dry with kitchen paper. Flatten with a meat tenderizer.

Rinse the rosemary, shake dry and set aside 4 sprigs for garnish. Strip the needles from the remaining branches.

Place the cutlets on a work surface, season with salt and pepper and top with the cheese slices. Distribute the rosemary needles on the cheese and roll up the cutlets. Pin together with toothpicks and place in an oiled baking dish.

Rinse the cherry tomatoes. Peel and halve the onions and cut into strips. Distribute both around the turkey rolls and drizzle with oil. Pour in a little water and bake in the oven for about 20 minutes.

Transfer to plates and serve garnished with the remaining rosemary.
