300 grams onions
2 garlic cloves
1 Tbsp vegetable oil
2 kilograms Tomatoes
1 Tbsp Vinegar
2 Tbsps sugar
salt
freshly ground peppers

Preparation steps

Peel the onions and garlic. Slice the onions into thin rings, and finely dice the garlic. Heat the oil in a pot, and sauté the onions until soft. Add garlic and cook briefly.

Blanch the tomatoes in boiling water for a few seconds. Remove the tomatoes and rinse the tomatoes under cold water. Peel the tomatoes, and coarsely chop. Add the tomatoes, vinegar, 125 ml (approximately 4 ounces) of water, and the sugar to the pot with the onions. Season to taste with salt and pepper. Bring to a boil, stirring constantly. Reduce the heat to medium and simmer for 1 hour, stirring constantly.

Rinse the basil, and coarsely chop. Mix into the sauce just before the sauce is done cooking. Pour into clean glass jars, and seal tightly.
