- 500 grams Tofu
- 500 grams starchy potatoes
- 1 large onion
- 2 Tbsps vegetable oil
- 300 grams Sauerkraut
- 2 Tbsps Tomato paste
- 300 milliliters Tomato juice
- 250 milliliters Vegetable broth
- salt
- freshly ground peppers
- sweet paprika
- Sour cream
- 4 Tbsps chopped parsley
Preparation steps

Peel the onion and chop finely. Drain tofu and cube. Scrub potatoes and cut into slices. Heat the oil in a saucepan and fry the onion until soft. Add tofu and potatoes and fry vigorously. Then stir in the sauerkraut and tomato paste.

Cook for 5 minutes. Pour in tomato juice and broth. Season with salt, pepper and 1 teaspoon pepper. Cover and cook for about 15 minutes, then remove lid and bring to a boil. Allow to boil uncovered for a few minutes until slightly thickened. Sprinkle with plenty of paprika, garnish with parsley and top each serving with a thick dollop of sour cream.
